Quinoa Fajita Burritos
This is a great recipe for when you want to feel indulgent but not actually indulge  :) I like to use it as a Meatless Monday option, especially when I'm trying to recover from a weekend of...fun.  I think the key ingredient to these burritos is the adobo peppers added to the quinoa. Besides heat, they add a smokiness that give the burrito a "meaty" feel without actually adding the meat. If you are wary of heat, start with only half a pepper and adjust from there.

Ingredients
  • 1 cup quinoa, rinsed 
  • 1 tablespoon EVOO
  • 1/2 Red Onion, thinly sliced
  • 2 Bell Peppers, thinly sliced
  • 2 tablespoons ground Cumin, divided.
  • 1 tablespoon of Chili Powder
  • 2 teaspoons of Garlic Powder
  • 1 15 oz. can Diced Tomatoes with Green Chiles, drained
  • 2 Chipotle Peppers in Adobo Sauce, diced
  • 4 Flour Tortillas
  • Shredded Cheese
  •  Avocado
  • Salsa to garnish


Servings: 4             Time: 15 - 20 minutes


 Directions 
Pepper and Onion Saute

1.) Cook quinoa according to package directions.

2.)Saute onion and pepper in olive oil and seasoning with med-high heat for 7-10 minutes, stirring occasionally.

3.)When quinoa finishes cooking, turn off heat. Add  diced tomatoes and chipotle peppers.
Burrito Layering
 



 4.) Assemble the burritos: spoon the quinoa mixture, onion/pepper, cheese, and avocado onto tortillas. Roll up, tucking both sides.

5.) Using pan that sauteed the peppers, heat the burrito over med-high heat until grilled, about 2 min on each side.

6.) Garnish with Salsa and serve
